Why Locals Love Hostal Restaurante Casa Chimo
Nestled in the charming village of Valbona, Teruel, Hostal Restaurante Casa Chimo is a true gem for those seeking authentic Spanish flavors in a warm, inviting atmosphere. This intimate restaurant and tapas bar embodies the heart of traditional Aragonese cuisine, where every dish tells a story crafted with local ingredients and passion.
Although modest in size, Casa Chimo makes a big impression with its approachable and genuine culinary offerings. The menu showcases a variety of typical local dishes that resonate deeply with the heritage of the region. Diners rave about the lovingly prepared bocadillos—simple yet bursting with flavor—and the homemade cheesecake, praised even by those usually wary of coconut. Each plate bursts with rich, honest tastes, weaving together the rustic charm and comfort of this peaceful village.
The dining experience here is relaxed and unpretentious, making it an ideal retreat for those who cherish tranquility alongside excellent food. The friendly and attentive staff, mostly local and warmly hospitable, enhance the experience, even if English may not be their forte. They certainly know how to create a welcoming ambiance and, as one satisfied guest humorously noted, they really know how to pour a perfect beer—an essential complement to the robust dishes served.
Guests often highlight the cozy lounge area where you can unwind with a drink after your meal, soaking in the calm of Valbona's surroundings. The blend of rustic décor and homely vibes makes Casa Chimo feel less like a restaurant and more like a gathering spot where locals and travelers alike share good food and stories.
Visitors from diverse backgrounds express their delight in unexpected ways—whether it’s the spotless, comfortable lodging offered for a restful night, the heartfelt smiles of the attentive young women who serve with dedication, or the surprise of discovering such culinary quality in a small village setting. Each review adds to the narrative of Casa Chimo as a place where simplicity meets excellence and where every meal feels like coming home.

I only spend one night at Casa Chimo but the experience was great. The room was comfortable and warm, with a decent shower and absolutely spotless. The food was top notch and so was the staff. Will be definitely coming back at some point!
